Vitamins are essential to life.  They help the body in regulating metabolism and assist in the biochemical processes that release energy from food.  There are two types of vitamins: water soluble and fat soluble.  Water soluble vitamins must be taken daily, because they are excreted by the kidneys.  The fat-soluble vitamins (A, D, E and K) can be stored in the body's fatty tissues.
